Halibut

2020 was a beast, but with some pivots and creative thinking, we were able to stay afloat and give people some ESR recipes to help get them through. With the launch of our new site, we're adding some of the recipes from our Meal Kits to help people continue to make excellent food at home for themselves and their loved ones.

Enjoy this simple Halibut recipe that allows this treasure of the Northwest to shine!

INGREDIENTS

  • 2 8oz. Fresh Halibut Filets 1 tbs. Cooking Oil (grape seed or olive oil recommended)
  • Salt
  • Pepper (fresh ground recommended)
  • Fresh lemon juice

INSTRUCTIONS

  1. Pre-heat oven to 350°
  2. Wrap fish filet in paper towel to keep dry
  3. Place a film of cooking oil in a high-quality sauté pan or nonstick pan on medium-high heat.
  4. Wait to season the fish with salt and freshly ground pepper until right before putting it in the pan.
  5. Once the oil is at temperature (15 seconds +-), place the flesh side in the oil. Give shake to pan to get oil under fish.
  6. Continue to cook for 3 minutes until golden brown on one side.
  7. Flip the fish gently and place the whole pan into a 350° oven to continue cooking for an additional 5 minutes
  8. Plate fish and drizzle high-quality olive oil and a few drops of fresh lemon juice. Season to taste
