Crab Cakes

2020 was a beast, but with some pivots and creative thinking, we were able to stay afloat and give people some ESR recipes to help get them through. With the launch of our new site, we're adding some of the recipes from our Meal Kits to help people continue to make excellent food at home for themselves and their loved ones.

What's not to love about a great crab cake? Chef Ethan shares his recipe for delicious Dungeness crab cakes, along with some tips on making the preparation simple.

INGREDIENTS

  • 1lb Fresh Dungeness Crab
  • 1/2 Cup Breadcrumbs
  • 1/2 Cup Mayonnaise
  • 2 tbsp. Fresh Chopped Cilantro
  • 1 Green Jalapeño Seeded & Minced 1/2 Small Red Onion Minced
  • 2 Egg Yolks
  • Kosher Salt
  • Fresh Cracked Pepper
  • 1 Lime

INSTRUCTIONS

  1. Preheat oven to 350°
  2. Squeeze the excess water out of the crab
  3. Add all ingredients to a mixing bowl and work the mixture well.
  4. Divide into 4 or 5 portions and form into cakes about 1.5” thick
  5. Preheat the nonstick saute pan on medium-high heat. Coat with 3-4 tbsp. of oil and let the oil heat for about 15 seconds
  6. Add the crab cakes and shake the pan to ensure the oil is beneath.
  7. Cook 2 minutes until golden brown and crispy. Flip the cakes with a spatula and repeat on the other side
  8. Place the pan in 350o oven and bake for 2 minutes.
  9. Remove pan from oven (pan will be hot!)
  10. Drain the crab cakes on a clean paper towel. Drizzle with olive oil and lime.
  11. Serve and enjoy!
